Veggie Tacos

Veggie Tacos
Pinto beans with chopped red onion and sea salt (Crock Potted for 7 hours)
Sauteed  homegrown zucchini with orange bell pepper and minced garlic
Shredded green leaf lettuce
Sliced avocado
Sprinkle of sharp cheddar cheese
Dollop of plain yogurt
Piled high on  white corn tortillas

  2. The kids ate the pinto beans with flour tortillas. They wouldn't touch the sauteed veggies. I liked it a lot!
